3 1/2 lbs of veal with bone or you can use lamb or goat cut into big pieces
4 cups of basmati rice (sela is the best for biryani)
2 tablespoons of ginger paste
1 tablespoons of garlic paste
Salt to taste
2 teaspoon of black pepper powder
3 tablespoons of honey
Pinch of cloves powder
5 tablespoons of Mauritian Briyani masala
1 large tomato roughly chopped
6 onions finely grated
2 onions roughly chopped
Few green chilies
2 lbs of potatoes cut into big pieces
2 tablespoons of vegetable ghee
2 cups of sunflower or vegetable oil
250 grams of plain yogurt
150 grams of fresh chopped coriander
80 grams of fresh chopped mint
Pinch of yellow food colour or saffronÂ
Method
Preparation of Beef Biryani (Mauritian Style beef briani) Recipe:
In a large bowl Marinate the meat with salt, pepper, Briyani masala, honey and cloves powder keep in the fridge for over night.
Heat oil and ghee, fry the onions until golden brown.
Add some salt and yellow food colour to the potatoes and fry in the same oil and ghee for about 7 minutes remove and set aside.
Blend together chopped onions, chopped tomato, and half of the fried onions into a paste add to the marinated meat along with yogurt, chopped coriander, chopped mint, green chilies and about one cup of oil and ghee that we used to fry the onions and potatoes.
Using a wooden spoon or just by hand mix everything well add about 2 cups of water, saffron that was dissolve in water or just yellow food colour add the fried potatoes mix well and set aside.
Bring water to boil in a large pot add salt, green cardamom, cinnamon stick, and cumin seeds boil the rice on high temperature.
After 2 minutes add a layer of the raw rice which is about 5 percent cook to the biryani mixture let the rice keep boiling, then after 5 minutes add another layer of rice which is about 25 percent cook and the third layers the rice should cook about 95 percent drizzle with saffron or yellow food colour and some fried onions
cover and let cook for 10 minutes on high temperature then reduce to low temperature and keep stirring the pot around the edges so that the biryani can cook well everywhere total
Cooking time is about 1 hour then turn off the heat and let the pot stay on the stove for 15 minutes before serving Beef Biryani (briani).
