Boiled Noodles with octopus curry

Ingredients

  • 2 kg of octopus 
  • Salt to taste 
  • 4 or 5 cloves 
  • 1 cinnamon stick 
  • 4 large tomatoes, fresh or canned 
  • 1 large onion, sliced  
  • 4 garlic cloves or paste 
  • 1 teaspoon ginger paste 
  • Couple of curry leaves  
  • 2 tablespoons of oil 
  • 1 or 2 green chillies 

Method

Heat a large pot over medium-high heat.  

  • Peel the ginger and cut into pieces. Trim the ends off the green onions, then chop 5 inches off the bases and save the remaining green tops for later. 
  • Add the ginger and green onion bases to the pot and cook for 2 minutes, or until fragrant. 
  • Add the water and octopus. Let boil until well cooked and turned pink.  
  • Cut into small pieces. Add with other ingredients and let simmer for around 20 minutes.  
  • Add chicken broth. Increase the heat to high, cover, and bring to a simmer.  
  • While the broth heats up, thinly slice the green onion tops. 
  • Add to boiling water for couple of minutes, drain the noodles, then return to the bowl. 
  • Pour the noodles and broth, then add the fish sauce.  
  • Add Octopus Curry. Garnish with green onion 
  • Enjoy!
