Boiled Noodles with octopus curry
Ingredients
2 kg of octopus
Salt to taste
4 or 5 cloves
1 cinnamon stick
4 large tomatoes, fresh or canned
1 large onion, sliced
4 garlic cloves or paste
1 teaspoon ginger paste
Couple of curry leaves
2 tablespoons of oil
1 or 2 green chillies
Method
Heat a large pot over medium-high heat.
Peel the ginger and cut into pieces. Trim the ends off the green onions, then chop 5 inches off the bases and save the remaining green tops for later.
Add the ginger and green onion bases to the pot and cook for 2 minutes, or until fragrant.
Add the water and octopus. Let boil until well cooked and turned pink.
Cut into small pieces. Add with other ingredients and let simmer for around 20 minutes.
Add chicken broth. Increase the heat to high, cover, and bring to a simmer.
While the broth heats up, thinly slice the green onion tops.
Add to boiling water for couple of minutes, drain the noodles, then return to the bowl.
Pour the noodles and broth, then add the fish sauce.
Add Octopus Curry. Garnish with green onion
