Ingredients for Chicken Seekh Kabob Briyani Recipe:
2 lbs of ground chicken
2 1/2 cup of basmati rice washed and soaked
Few bay leaf, cardamom, cinnamon and 1 tsp of cumin seeds for the rice
2 large fried onions
3/4 cup of Greek plain yogurt
1 tsp of cumin seeds
1 large onion crushed or paste
2 tbsp of ginger and garlic paste
2 tsp of Kashmiri chilli powder
2 tbsp of coriander powder
2 tbsp of garam masala powder
1 cup of roughy chopped fresh coriander leaf
1/4 cup of roughy chopped fresh mint leaf
1 cup of chopped fresh coriander leaf
2-3 large crushed or paste fresh tomatoes Few green chillies (optional)
Salt to taste
Pinch of yellow food colour or safran mix with 2-3 tbsp of water
1/2 cup of sunflower or vegetable oil Enough oil to fry the kabobs
Method
Preparation of Chicken Seekh Kabob Briyani:
Add enough water in a large pot, along with salt and the spices when the water starts to boil add the rice and cook until 80% done drain and set aside.
In a food processor, add the chicken, roughly chopped coriander leaf, mint, half of the coriander powder, half of the garam masala powder, about 2 tbsp of the crushed onions, half of the ginger and garlic paste and salt pulse until everything combines.
Transfer to a bowl and shape the kabobs. Heat oil in a pan on medium fry the kabobs in 2-3 batches until golden brown remove on plate and set aside.
Heat oil in a large pot on medium add the cumin seeds let saute for 20 seconds, add the crushed onions let cook until the raw flavor gone then add ginger and garlic paste cook for another 20 seconds then add the crushed tomatoes, coriander powder, chili powder, salt, yogurt and garam masala powder cook for one more minute. Add little bit of water cover and cook on low heat for 10 minutes.
Add the kabobs and if needed add a bit of water and let cook for another 10 minutes. Turn off heat and add a layer of rice following with the fry onions a bit of fresh coriander leaf and a bit of food colour or safran and repeat until done cover and cook on low for 10 minutes.
