Du pain frir ( Mauritian fried bread)

Ingredients

Ingredients for Mauritian fried bread (Du pain frir) : 

  • stale bread
  • besan ( gram flour)
  • flour 
  • salt ( to taste)
  • chilli flakes 
  • coriander
  • food colouring (optional)
  • Green chilli. 

Method

Instructions for Mauritian fried bread (Du pain frir) : 

  1. Cut your bread
  2. Mix gram flour, flour, salt, chilli flakes, coriander, food colouring ans green chilli to create the batter.
  3. Add water until the batter combines well. It should be thicker consistency than pancake batter.
  4. Dip bread into batter and fry on medium heat for a few minutes each side

*** tip*** if you’ve used up all your bread and have batter left over. Get a teaspoon, scoop the batter up and drop it in the oil to make pakoras!
