Ingredients for Mauritian fried bread (Du pain frir) :
- stale bread
- besan ( gram flour)
- flour
- salt ( to taste)
- chilli flakes
- coriander
- food colouring (optional)
- Green chilli.
Method
Instructions for Mauritian fried bread (Du pain frir) :
- Cut your bread
- Mix gram flour, flour, salt, chilli flakes, coriander, food colouring ans green chilli to create the batter.
- Add water until the batter combines well. It should be thicker consistency than pancake batter.
- Dip bread into batter and fry on medium heat for a few minutes each side
*** tip*** if you’ve used up all your bread and have batter left over. Get a teaspoon, scoop the batter up and drop it in the oil to make pakoras!
