Ingredients for Genoise Cake With Fresh Cream and Fruits:
Step one sponge cake:
2 1/4 cup of cake flour
10 large eggs
Pinch of salt
1 1/2 cup of granulated sugar
2 teaspoon of baking powder
1/2 teaspoon of baking soda
1/4 cup (60 ml) melted butter unsalted
1 teaspoon of pure vanilla extract or paste
Step two Custard:
700 ml of full cream milk liquid
2 tablespoons of vanilla flavor custard powder
2 tablespoons of all purpose flour
1/2 cup of granulated sugar
1/2 teaspoon of pure vanilla extract or paste
Step three fresh cream:
1 Liter of whipping cream or fresh cream
1/2 cup of icing sugar
1/2 teaspoon of pure vanilla extract or paste
Method
Preparation of Genoise Cake With Fresh Cream and Fruits:
Preheat oven to 350 F.
Grease two 10" cake pan with butter or oil and line them with parchment paper and set aside.
In a large bowl beat the eggs, sugar and vanilla extract or paste for 8 minutes with an electric hand mixer.
Add melted butter and beat for a minute.
Sift the flour, salt, baking powder, and baking soda add to the wet ingredients in two batches mix with spatula and finish it up with electric hand mixer do not over mix.
Pour the cake batter into the two pan equally bake 20 minutes and let cool completely.
In an saucepan add all the ingredients for step two cook on low heat for about 10 to 15 minutes or until the Custard becomes thickened transfer to a bowl cover with plastic wrap and let cool completely.
In a large bowl beat whipping cream, icing sugar and vanilla extract or paste this may takes about 20 minutes to become thicker.
To assemble the cake place the cake on an cake stand cut both cakes into two to make a four layers genoise cake.
Place one layer spread Custard about 5 tablespoon then add the second layers spread with whipping cream add third layers spread Custard and cover the whole cake with whipping cream and top with your favorite fruits I've used fresh kiwi and can peach.
