Ingredients for Jack fruit (meat substitute) curry & cocobeans recipe ( suitable for vegan/vegetarian) :
1 Onion
1 tsp Ginger paste
1 tsp garlic paste
1 chopped green chilli
1 tbs curry leaves
2 tbs fresh corriander
1/2 tsp Red chilli powder
Salt to taste
3 tbs Curry powder
1/2 tsp Chilli flakes
1/2 tsp Turmeric powder
3 tbs fried onion
1/2 cup of cooking oil
Method
Preparation of jackfruit curry & cocobeans recipe:
Open the can of Jack fruit drained & cooked in pressure cooker for 2 whistle only.
Open the rosecoco beans can drained & keep aside.
Heat 1/2 cup oil add onion, ginger & garlic paste, green chilli & curry leaves simmer 2-3 mins then add the rest of the spices, while the spices is being cooked add little bit water from time to time to avoid spices burning.
Then add the chopped tomatoes once tomato is soft & well cooked add the jack fruit stir & combine with all spices reduce the heat to low
Then add the coco beans, give it a good stir after 5 mins put the heat on medium & add the fried onion & a cup of water, bring to the boil then reduce heat to low until you are happy with the required gravy.
Switch off heat & garnish jackfruit curry & cocobeans with corriander.
