Ingredients for Malaysian Beef Curry With Coconut Sauce recipe:
3 lbs beef fillet or steak cut into
1/4 inch thick
2 lbs potatoes (medium size) skin on wash and poke all over with a fork
1 can (400 ml) coconut milk
4 tbsp sunflower or vegetable oil
1/4 cup fresh chopped cilantro salt and pepper to taste
1 tsp of ginger sliced
2-3 cloves of garlic
2 large onions roughly chopped
2 tsp of brown sugar
1 1/2 tsp of Laila's curry powder
2 tbsp of lemon juice
Method
Preparation of Malaysian Beef Curry With Coconut Sauce:
Bring water to a boil add salt and potatoes let boil until well done drain and set aside.
In a food processor place onions, 2 tbsp of oil, 1 tbsp of lemon juice, ginger, garlic, Laila's curry powder, sugar, and salt whirl to form a smooth paste.
Remove 1/4 cup save in the refrigerator. Rub the paste all over the beef and set aside.
Toss the potatoes with remaining oil, and salt, place on a large baking dish. Place the marinated beef over the potatoes and bake in a preheated oven of 400 degrees for 45 minutes to an hour or until desire donness.
Flip the beef in between baking time.
Meanwhile add the 1/4 cup of paste and oil in a sauce pan, let it saute for a minute.
Add the coconut milk lemon juice, cilantro and salt let simmer for 5 minutes or until reduce to about 1/3 cup.
Remove from heat and drizzle all over the meat.
