Ingredients
For Mauritian King Prawn Rougaille recipe you will need:
- King Prawns
- 1 Cup of oil
- 1 Cup of tomato passata or crushed tomatoes
- 1 big onion sliced Handful of thyme Curry leaves
- 1 tbsp garlic
- 1tbsp ginger
Optional:
- 3 green chillis ( to taste)
- Spring onions
- Chives
Method
Preparation of Mauritian King Prawn Rougaille :
To clean the prawns:
- Take off the head, scoop the “ dirt”. Cut the prawn using kitchen scissors and de-vein.
- Then sautee the prawns and keep to the side.
For the rougaille:
- Using the same pan, add the oil, onions and ginger and garlic paste.
- Let the onions become translucent then add the thyme
- After frying for a bit add the tomatoes. And let it cook for 15 minutes.
- Once cooked combine the prawns and the rougaille base.
- Cook for another 5 minutes
- Finally add the curry leaves and the rest of the greens in Mauritian King Prawn Rougaille & enjoy!!
