Mauritian wedding Style Cake Recipe (gateau mariage mauricien)

Ingredients

13"×9" cake pan

Ingredients for Mauritian wedding Style Cake Recipe: 

For the cake:

  • 2 1/4 (338g) cups of all purpose flour
  • 1/2 tsp of salt
  • 1 cup of unsalted butter at room temperature
  • 2 1/4 tsp of baking powder
  • 8 large eggs
  • 1 3/4 (350g) cups of granulated sugar
  • 1 tsp of vanilla extract

 

Buttercream Frosting:

  • 1 cup (130g) of icing sugar
  • 1 cup of crushed roasted peanuts
  • 1/2 cup (125) of unsalted butter at room temperature
  • 1/2 tsp of vanilla extract

Method

Preparation for Mauritian wedding Style Cake Recipe: 

  1.  preheat oven to 375 degrees Fahrenheit. Grease the cake pan very well line with parchment paper and set aside.
  2.  In a large bowl mix together butter and sugar beat well until creamy, add the eggs one at a time along with the vanilla extract.
  3. In another bowl stir together flour, baking powder and salt add to the batter in addition beat until just combined at this time DO NOT OVER MIX pour the batter into the cake pan spread evenly and bake for 35 minutes or until insert a butter knife if comes out clean means the cake is done remove from the oven and let cool completely.
  4. In a bowl beat together butter and icing sugar really well add vanilla extract continue beating for about 5 minutes.
  5. Spread the butter cream onto the top part of the cake then top up with the crushed peanuts use your hand and press down the peanuts to make sure they are stick to the butter cream let it set for about 10 minutes before slicing.
