Poudine Manioc

Ingredients

  • 700g cassava
  • 500ml coconut milk
  • 3 tbsp sugar
  • Vanilla essence
  • Grated coconut

Method

  1. Peel and grate cassava.
  2. Preheat oven 180 deg.
  3. Put grated cassava, coconut milk, sugar, vanilla essence in blender and blend.
  4. Grease tin with butter and pour mixture.
  5. Bake for 45 minutes on top rack in oven.
  6. Allow to set in refrigerator for 3 hours.
  7. Cut and roll into coconut powder and serve ! Et voilà
