Ingredients for Special Mauritian Fried Noodles Recipe
2 lbs of fresh noodles or dried package noodles follow my instructions
1/2 lb chicken breast
1 lb shrimp clean and deveined
2 large eggs
1/2 teaspoon of turmeric powder
Vegetable oil about 3/4 cup
1 carrot peel and cut into strips
1 bunch of Bok Choy
1 or 2 bunch of green onions
4-5 tablespoons of dark soya sauce
1-2 tablespoons of fish sauce (Optional)
Salt and pepper to taste
2 teaspoon of chili sauce or more if desired
Method
Preparation for Mauritian Fried Noodles Recipe
Bring water to boil in a large pot add salt and turmeric powder.
Add the noodles cook until 90% done drain and set aside.
While waiting drizzle some oil on the noodles mix well so they dosen't stick.
Wash and chop the Bok Choy and the green onion and set aside.
Peel and cut the carrot into tiny strips and set aside.
Clean and cut the chicken into small pieces and set aside.
Peel and wash the shrimp set aside.
Heat oil in a Wok Beat the eggs and fry for one minute each side remove and set aside.
In the same Wok cook the shrimp for about 5 minutes (Do not over cook) remove and set aside.
In the same wok with the remaining oil Cook the chicken until done remove and set aside.
Now add the Bok Choy cook for 2 minutes add the carrots with little bit of salt and pepper
Cook for a minute or two then add the noodles and soya sauce mix well stirring occasionally at last add the chicken, shrimp eggs and green onions using two forks or a thong mix the noodles well.
Cut the fried eggs into tiny strips add to the noodles mix well remove from stove and serve immediately. Bon appetit
