2.9 ml of instant yeast or a bit more than 1/2 teaspoon
1/4 teaspoon even of baking soda
Salt to taste
1/2 cup of yellow split peas
Pinch of turmeric powder
Water as needed (normal tap water)
2 tablespoons of chopped green onions
1 tablespoon of chopped coriander
Oil for frying
Method
Preparation of Perfect Chana Puri:
In a large bowl add flour, salt, yeast and baking soda mix well.
Add water little by little mix until foam the right texture according to the video cover and let rest in a warm place for at least 6 - 8 hours.
Bring water to a boil add, yellow split peas, salt and turmeric powder boil until softened.
Using a spoon mashed the split peas, add the chopped green onions mix well and set aside.
Heat oil in a deep pan on medium, foam the split peas into small balls dip in the channa puri batter fold to make sure no dholl goes outside while frying.
Fry for about 2 - 3 minutes the channa puri should stay white after frying.
