Vegetarian tandoori rice recipe

Ingredients

Ingredients for Vegetarian tandoori rice recipe:

  • 4 cups basmati rice
  • 4 tbsp plain yogurt
  • 3 tsp Laila's Tandoori Masala
  • 2 lbs potatoes peeled and cut into small pieces
  • 200g frozen peas
  • 350 g paneer cut into small pieces
  • 1 cup carrots peeled and cut into small pieces
  • 3-4 onions finely chopped
  • 1/4 cup fresh cilantro + 2 tbsp
  • 1 tbsp chopped mint
  • 1/2 cup vegetable oil salt to taste
  • pinch of saffron dissolved in water
  • pinch of yellow food color

Method

Preparation of Vegetarian tandoori rice :

  1. Bring water to a boil in a large pot, add salt and rice boil until 80 percent done, drain and set aside.
  2. Heat oil in a large pot or deep bottom pan.
  3. Add some food color and salt to the potatoes, fry for 5 to 7 minutes, add the onions, cook for another 5 minutes.
  4. Add paneer, carrots, chopped cilantro and salt.
  5. Cook for a minute then add yogurt, Laila's Tandoori Masala, a bit of water, cover and let it cook until all the vegetables are completely done.
  6. Add water if needed. Arrange the rice over the veggies, sprinkle with 2 tbsp cilantro, green peas and saffron.
  7. Cover and cook on very low flame for 10 minutes.
  8. Bon appetit, Vegetarian tandoori riceĀ  is ready to eat.
